As a native of South Louisiana, Jessie began his culinary journey at the John Folse Culinary Institute at Nicholls State University. Fulfilling his desire for adventure, in 1996 he relocated to Paris, France, where he would go on to become an acclaimed chef and successful business owner. He spent several years working alongside world renowned chefs including Bernard Loiseau and Michael Troisgros. Jessie traveled to Dijon, France where he perfected his pastry techniques with Stephan Vannier.

In 2000, Jessie created Votre Chef a Domicile, a personal chef and catering business. Soon after, he was recognized by his peers for the success of Chef a Domicile and was awarded the Coup de Coeur award for best new small businessat the Palais des Congres. He has since been featured in over 14 different culinary and business magazines.

After 8 years of continued success with Votre Chef a Domicile, his desire for new challenges brought him back to the United States . His new endeavor, "The Louisiana Spice Truck" takes the New York City street food concept and blends it with original Louisiana flair. Jessie's unique version of Louisiana cuisine will feature a changing menu using the freshest seasonal products grown by local farmers.
